Being the trademark for sushi over the past few years, Fujimamas serves up tasty fusion dishes like shiitake sirloin with wasabi mashed potatoes, baby-back ribs smothered in chocolate-teriyaki sauce, pan-seared salmon on a curried corn pancake, "Thai Caesar salad" that is big enough to share, and a wide array of island-inspired sushi.

Their back lanai is a wonderful place to sit and indulge in artwork made by local artists, and thriving bamboo.

Child friendly, with "bento meals for kids"

Fujimamas Evolution

Fujimamas (at Redwater) in Waimea has a new owner. Chef David Abrahams has taken the culinary reins as of the first of October, and it looks very promising. He has been an executive chef and private caterer for over 25 years- including working at the Beverly Hills Hotel before moving to Hawaii to work at Merriman's and then heading on to the Chef d' Cuisine position at Brown's Beach House at the Fairmont Orchid.
The new lunch menu offers a wide array of options, and their sushi bar will now be open during lunch hours as well. Another great thing about the lunch menu is that it seems as though it will constantly be changing,-due to the fact that they use the freshest organic and LOCAL ingredients available and create cuisine accordingly.
I'm really excited and really curious to see what happens next.
